For this last inquiry post I will be doing something that was more or less inspired by myself. This week I’ll be making fajitas. I think this is a really nice dish and it goes to show you don’t need to buy a three dollar fajita packet to make good fajitas at home. They’re delicious, healthy and fun to eat. Enjoy!
Ingredients
- Chicken
- Bell peppers
- Onion
- Tortillas
- Cheddar cheese
- Sour cream
- Paprika
- Chili powder
- Garlic powder
- Salt
- Pepper
- Cayenne pepper
- Arrowroot powder or Corn starch
Servings
This recipe makes about 8 fajitas which is enough to serve 2-3 people depending on portion size or 1 person with leftovers.
Instructions
- Cut up the chicken into small cubes.
- Slice the bell pepper into thin strips.
- Cut the onion into half moon slices.
- Sautee the onion and the pepper until they are soft and have some colour to them.
- Add in the chicken and cook for 2-3 minutes until it is about half cooked.
- Add in the seasonings (2 tbs paprika, 2 tbs chili powder, 2tbs garlic powder, salt and pepper to taste, 1 tsp cayenne pepper and 2 tbs corn starch). Mix well.
- Add about 1/4 cup of water. This should mix up well with the seasonings and the sauce should become thick because of the corn starch.
- Simmer until the chicken is cooked through. Adjust seasoning if needed.
- **OPTIONAL** Heat up your tortillas in a pan or warm them up in a microwave.
- Serve with sour cream and grated cheese.
Adaptations
I think it’s pretty hard to add some adaptations to chicken fajitas but you could probably make a few that I will list below.
- You could possibly change the protein source depending on your dietary restrictions although I have never tried this. It might taste okay with tofu or maybe some seafood.
- Change the tortillas, I think they taste best with flour tortillas but you could use corn or other if needed.
- Remove the sour cream if you do not like it or cannot eat it.

I think this is a great last post to this blog for my inquiry project for now. I used to make this recipe a lot and I would always buy the fajita package but they’re actually super easy to make at home and just as good. So save that money! I hope you enjoy this recipe if you make it.
