Free Inquiry # 7: Andrew’s Pancakes

This weeks recipe is inspired by father Andrew. Pancakes are one of my favorite breakfast meals. I think mainly because I have fond memories of my dad making me and my sister these pancakes in the morning and always being so excited. What I want to achieve with this recipe is just replicating his basic pancake recipe and then as always ill give examples of how we can change this up to make them your own or fit your personal favorite items. I also hope to show that you can easily make delicious pancakes at home without the use of the store-bought premade mix. Thanks to my father Andrew for this recipe and the inspiration, hopefully we can carry on the tradition of morning pancakes for much longer!

Ingredients

  • Flour (all purpose)
  • Milk
  • 1 Egg
  • Baking powder
  • Baking soda
  • Cinnamon
  • Salt
  • Sugar
  • Butter

Servings

This recipe makes about 5-6 medium-sized pancakes. Feel free to adjust the recipe as need be to fit the servings required.

Instructions

  1. Sift the dry ingredients into a large mixing bowl. 1 & 1/2 cups of flour, 3 tsp baking powder, 1 tsp baking soda, 1 tbs cinnamon, 1 tbs sugar, 1 tsp salt.
  2. Make a small well in the sifted dry ingredients and add your wet ingredients. 1 & 1/2 cup of milk, 1 egg, 1 tbs melted butter.
  3. Mix the ingredients well. The batter should be not too thick but not too runny. Adjust the density of the batter by adding a bit more flour or milk accordingly.
  4. Pre-heat a large pan to medium to medium-high heat.
  5. Add about a tsp of butter to the center of the pan to make sure the batter does not stick.
  6. Use a 1/2 measure cup to pour batter into the pan so you get equal sized pancakes each serving.
  7. Cook until each side is golden brown and the center is not runny.
  8. Serve with butter, maple syrup, yoghurt or whatever you prefer!

Adaptations

This is a recipe that I think can be adapted in many different ways. Here are some of my favorite. That being said, my all-time favorite is just basic with no changes to this recipe.

  • Change up the flour type to whatever you prefer. This can be oat flour, almond flour (both of which can be made by blending oats or almonds into a fine powder).
  • Feel free to remove the cinnamon or sugar if you find this overpowers the taste of the pancakes.
  • Feel free to add whatever extras you may want here. Sometimes it is nice to mix in some bananas into the mix or chocolate chips. Likewise you could put blueberries on the batter right before you flip the pancake to make blueberry pancakes.
  • Change up your toppings. Some of my favorites are vanilla yoghurt, plain yoghurt, whip cream, or your favorite fruit.

This is such a nostalgic recipe for me that brings back so many childhood memories. An absolute comfort meal. This is a great, easy, warm recipe to make for breakfast, camping, skiing, birthdays or whatever the occasion. I hope this recipe inspires you a little bit to make your own pancake batter rather than buy premade mix.
